Brasserie Thoumieux
Thierry Costes has entrusted the kitchens of Thoumieux to Sylvestre Wahid (snatched up from l’Oustau de Baumanière, in Les Baux-de-Provence) — big mirrors, facetted glass columns, bubble lamps hung from the ceiling and gooseneck table lamps with emerald-colored lampshades fill the space. You’ll find quality ingredients presented in often deconstructed ways. On the lunch menu, quarters of sucrine lettuce, a hard-boiled egg, anchovies, olives, herbs and flowers encircle a mi-cuit tuna steak; meticulously trimmed and sautéed vegetables parade out ahead of “the most beautiful fish of the day” (which happened to be a perfectly prepared filet of pollack); and, from the Thoumieux pastry shop across the street, there are vanilla or chocolate religieuses, baba au rhum and a fraisier cake…
